Originally from Bra, born in 1986, Vincenzo La Corte is the chef of Palás Cerequio. His is a proposal of simple but not banal dishes, able to excite for the purity of the workmanship that focuses on absolute respect for the raw materials, true ambassadors of the territory.

Meat, fish seasonal vegetables. Cleanliness of taste and absence of special effects. The cuisine of La Corte is a return to the origins, traveling to pure and engaging flavors, where it is simplicity is still able to excite. A menu inspired by the most authentic Langhe, without contamination. And a “breath” of Mediterranean inspiration, retrieved from the ancient recipes of his Sicilian-born parents.
A kitchen rediscovering itself, investigating its roots: understated, measured, elegant. An adventure into the authenticity of dishes and flavors that, beyond superstructures, can reveal the “truth” of a taste we thought lost.
Vincenzo La Corte collaborates on the preparation of the menus and new offerings in Palás Cerequio’s bistro area along with Roberto Stroppiana, the facility’s sommelier. A collaboration that puts the extraordinary wines of the “Temple of Barolo,” in whose Caveau are stored thousands of labels from the most prestigious crus of Barolo and Barbaresco, with an astounding depth of vintages, at the center of the gastronomic experience.
